This is another super simple recipe using ingredients you may have in the pantry.
- Bacon or Pancetta
- Black pepper
- Parmesan cheese
The real key is good, fresh pasta. Oftentimes this dish comes with a cream sauce and loads of butter. The traditional version is much simpler. Not that I have anything against slathering things in cream and butter, but when you have fresh pasta, sometimes you just want to enjoy its flavor and texture.
Peas you say? Sacrilege! Trust me, their sweetness will pop with the salty bacon and the creamy eggyness.
Whisk eggs together with some grated Parmesan cheese and fresh cracked black pepper. Use a mortar and pestle for the pepper if you can to get fragrant, spicy black pepper.
Bacon! or pancetta. Render it down and then use as little or as much of the grease as you want.
When your pasta is perfectly cooked, add it to the bacon pan with some of the pasta water. Remove from heat. Gently add your whisked eggs mixed with Parmesan cheese. Add peas. Stir all together, add fresh cracked black pepper and some extra grated parm if you want.
